
The latest and newest dining experience in Saugeen Shores, Fusion on the Lake, celebrated its official Grand Opening on Wednesday, January 28th (2026).
It was a Grand Opening with Mayor Luke Charbonneau in attendance for the ribbon cutting, along with Mark Paoli (Director of Development Services) and the entire staff of Fusion on the Lake.


The Mayor then also presented the traditional ‘housewarming’ plant on behalf of the Town symbolizing growth and prosperity for the new business.

Outside it was a blustery and snowy winter day in Port Elgin but, inside, Fusion on the Lake offered tasty samples from their exciting new menu of East Indian cuisine.

“I absolutely love Eastern cuisine with its unique flavours,” said Mayor Luke Charbonneau, “and I will definitely be looking forward to the exciting new menu now here in Saugeen Shores at Fusion on the Lake.
I think it will also be an exciting dining experience for visitors when the patio opens in the summer and then into fall with Pumpkinfest.”
Owner, Harsimran (Simran) Rajput said that she wanted this to be an authentic East Indian dining experience. “I wanted this to truly be a dining experience,” she says. “Our menu is authentic east Indian … but (she says with a mischievous smile) with a ‘western’ twist.
With Simran’s sense of eastern design, stepping in to ‘Fusion on the Lake’ is to become infused into Indian culture. From the authentic black marble floors to the colours chosen by Simran, there are hints of India everywhere. From the wall murals to the little momentoes such as photos, Simran has captured and brought to Saugeen Shores the exotic feel of India.
